GLASSWARE
The actual authenticity of the style
or shape of a glass is really not all that important.
What is important is that the glass should be spotlessly
clean, from any detergent or odour - if
glasses are stored upside down the air trapped in the
bowl will become stale and affect the smell and taste of
a drink. If glasses have been stored upside down for any
length of time, rinse before use. When making a drink,
choose a glass that will be no more two-thirds full when
both the ice and the drink have been added. The general
types of glasses which will be needed are:
Cocktail glasses- These have a
capacity of about 120 ml/4 fl oz, are classically 'V'
shaped, although available in other shapes.
Old Fashioned/tumbler -
traditionally with sloping sides, that holds about
175-250 m1/6-8 fl oz.
Champagne flute-that is, a
stemmed glass with a tall, slim bowl that curves in
slightly at the rim. The old-fashioned saucer-shape
allowed the bubbles to disappear and the drink to warm
up too quickly.

EQUIPMENTS
The items below may not be absolutely
vital, and there is some scope for improvisation, but
they will make cocktail-making easier, and more
successful.
Cocktail shaker: the 'proper'
cocktail shakers are usually made of stainless steel,
have a strainer and are in two parts.
Screw-top jar: one with a neck
wide enough for ice cubes can be used quite successfully
in place of a standard cocktail shaker.
Strainer: The traditional ones
are made of stainless steel and have a flat, not curved,
surface with the holes in, and a springy wire
edge.
