Introduction
to Liqueurs
Liqueurs, called as balms,
crèmes, elixirs, and oils and used over the
centuries as medicines and tonics, love potions,
and aphrodisiacs are the flavoured and sweetened
distilled alcoholic beverages known as Liqueurs.
Recipes for making digestive
liqueurs have been found in Egyptian tombs and
even the scrolls from classical Greece describe
stomach-soothing alcoholic drinks. Monks and
alchemists distilled them in an atmosphere of
magic, trying to discover the elixir of eternal
youth.
The word liqueur is
derived from the Latin liquefacere, which means
'to melt, or dissolve'. Maceration, distillation
and percolation individually or severally are the
various methods used for obtaining the flavor from
the fruits and spices, the final result of any of
these methods, however, is that the flavour of the
spice or fruit is dissolved into the alcoholic
base. The mixing of the same with the desired
sugar and / or water and a short period of ageing
will allow the blending of all the elements. Many
are the recipes for liqueurs from the very simple
single spice to the most complex whose ingredient
and quantum is a very closely held secret.
Liqueurs, served straight, poured over ice, or
mixed in an endless variety of combinations that
may include liquors, brandies, and cream, sweet in
flavour and with ingredients promoting digestion,
are popular after-dinner drinks. They can and are
used as flavourings in various desserts and food
